So if you don't know by now Kyle and I are trying to sell our home in Lincoln as we wish to move to Ashland. We bought some land out there and are waiting to build until our home in Lincoln gets sold.
Well to sell your house in Lincoln you have to kind of "suck up" to Realtors. To do this you have to offer treats during your open house! I am completely fine with that as I like to bake :) I may not be as good as my Mother or Mother-in-law, but I am learning and I LOVE to try new recipes.
So tonight while Kyle was gone for a "guys night" I was at home baking.
I had a box of Carmel Walnut Brownies which was easy to make. You dump in water, oil, and an egg and mix up then throw it in the oven. No one and I mean no one can screw this up :)
Then I was debating what else to make. I love peanut butter and chocolate, but I am a sucker for oat meal! I don't know why it just gets to me. I think it's because it makes cookies/bars a little chewy.
Anyways I was going through my new cookbook (Better Homes and Gardens: Bridal Edition) that we got for a wedding present and low and behold there it was!!! The Peanut Butter-Oatmeal Rounds recipe!!! I jumped for joy (literally) because I knew this was going to KICK A**.
For some of you that know me I am good at multi tasking, BUT not so well in the kitchen. I make a lot of messes in the kitchen and always have to set the timer because I know I WILL forget that something is baking :)
So once I got the brownies in the oven I decided to start mixing the cookie dough. At this time I was wishing I had my Kitchen Aid mixer that we got from a bridal shower. All of our gifts are in Nick and Pat's basement waiting for our new home to be built.
Anywhooooooo....I know how to use a hand mixer quite well :)
Step 1: Get all your ingredients out that you may need. I like to have everything at room temperature before I start including the eggs!!
Step 2: You start with mixing the peanut butter and butter together until well blended.
Step 4: Beat in eggs and vanilla until well combined. As far as vanilla goes I like to use the clear vanilla just so it doesn't give the batter as brown as a tint. I learned this from my mom I believe. It tastes the same so you can't go wrong with it!
Step 5: Beat in as much of the flour as you can with the mixer. I was able to mix all of the four with the mixer, not sure why it suggests that, but owell :) On a plus side, I didn't get flour thrown up on me! I am learning not to turn the mixer on high when there is a lot of flour!
Step 6: Add in the yummies! Stir in rolled oats and semisweet chocolate pieces!!!
AT THIS POINT YOU MUST TASTE TEST THE DOUGH BEFORE YOU BAKE IT :)
Step 7: Drop dough by the rounded teaspoons. Okay this step I have never done before. I always use a cookie scooper. Well I was so into this recipe I didn't even think of using a cookie scooper!!! I spent some time getting the dough nice and round using two teaspoons. I must say I think that made the cookies taste even better. That's some LOVE being put into the dough!
Step 8: Bake for 10 minutes or until the edges are golden brown. I baked mine for 12 minutes just to make sure they were done.
Step 9: Cool and a taste test is a must!!!
RECIPE
Bake 375
3/4 cup butter, softened
1/2 cup peanut butter
1 cup granulated sugar
1/2 cup packed brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
2 eggs
1 teaspoon vanilla
1 1/4 cups all-purpose flour
2 cups rolled oats-I used old fashioned oatmeal
1 cup semisweet chocolate pieces-I might have dumped in a little extra :)
